
Chunky Chocolate Cream Pie

1 (4-serving) package Jell-O Sugar-Free Instant Chocolate
Pudding Mix
2/3 cup Carnation Nonfat Dry Milk Powder
1 1/4 cups water
1 tsp vanilla extract
1 cup Cool Whip Lite
1 cup raisins
1 tbsp (1/4 oz) mini chocolate chips
2 tbsp (1/2 oz) chopped pecans
1 (6 oz) Keebler Chocolate Flavored Piecrust
1 tsp coconut extract
2 tbsp flaked coconut
In a large bowl, combine dry pudding mix and dry milk powder.
Add water. Mix well using a wire whisk. Blend in vanilla extract and 1/4 cup
Cool Whip Lite. Gently fold in
raisins, chocolate chips and pecans. Spread mixture evenly into piecrust.
Refrigerate
30 minutes. In a small bowl, combine remaining 3/4 cup Cool Whip Lite and
coconut
extract. Spread mixture evenly over top of set pudding. Evenly sprinkle coconut
over top. Refrigerate at least 2 hours. Cut into 8 servings.

Hint: To plump up raisins without "cooking" place in a glass measuring cup and microwave on HIGH for 20 seconds.
