Eva's Zucchini Bread

8 servings

3 Eggs
1 c Vegetable oil
2 c Granulated sugar
2 c Shredded zucchini
2 t Vanilla
3 c Flour
1 t Baking soda
1 t Salt
1/2 t Baking powder
1 t Cinnamon
3/4 c Chopped walnuts
1 c Raisins (optional)

Beat the eggs. Add the oil and sugar, and mix well. Preheat the oven to 325 F. Grease and flour 2 bread pans. Mix all dry ingredients together, and add sugar/egg/oil mixture to it.
Fold in the zucchini and nuts (also raisins, if used) Bake 1 1/2 hours.
